WHAT IS THE MOTHER?

The mother of vinegar is a substance composed of a form of cellulose and acid bacteria of vinegar which develops from the fermentation of alcoholic liquids and which, with oxygen, transforms alcohol into vinegar acid. After the acetic fermentation the products are filtered or pasteurized to eliminate any residue. These vinegars are raw therefore unfiltered and unpasteurized and still have inside the “mother” of the vinegar which is rich in proteins and enzymes.
