Manzanilla Cacereña

The origin of the Manzanilla Cacereña olive tree is from the north of Cáceres, where it has traditionally been cultivated for a long time 

It is an extremely versatile variety, with a mixed use, both for table olives and for producing oil. It is also known by different names, among which are: costaleña, bold, carrasqueña, avellanina, among others.

Characteristics of the olive of the Manzanilla Cacereña

  • The cacereña olive , is an early ripening.
  • Its fruit is medium in size, weighing approximately 3 to 4 grams.
  • It has a rounded or ovoid shape.
  • When ripe, it reaches a black color.
  • It has a high pulp-bone ratio.
  • It has a low oil yield, due to the low fat yield.
  • It has low resistance to detachment, which makes it easier to harvest than any other olive.
  • Most of the production is dedicated to table olives.

Cáceres olive oil is considered good and excellent, although it depends largely on the date it was collected.

The aroma of the oil is fruity, of the type of ripe green fruit, tomato, grass, apple and others.

Its levels between bitter and spicy, make it a pleasant oil to the taste of people.

In addition, it contains high stability, due to its composition of antioxidants and a large percentage of oleic acid.
