

This is one of the most widespread varieties in Andalusia, with a strong presence in the province of Seville, although it is also grown in Córdoba, Cádiz and Málaga.
This is a strong olive well adapted to difficult lands, to limestone soils and to a high level of salinity. It is also very resistant to frequent frosts and droughts of its original place. This variety “Lechín de Sevilla” is closely linked to “Acebuche”, which is an olive tree cultivated in its natural way of life since splendid ages of the agrarian rural world of this specific place.
Lechín de Sevilla Characteristic
The extra-virgin olive oils of this variety are characterized by a balance between green, peppery and bitter notes. They are very fruity oils.
From an organoleptic point of view, we are dealing with a virgin olive oil with a medium aroma, of grass and olives, quite balanced. Its flavor has medium bitterness and a green almond aftertaste in the mouth. Monovarietal Lechín oils are not usually sold, but it is used to complement other varieties such as hojiblanca and picual.

Uses : It is used both for the production of olive oil and for dressing in black. The olive oil Lechín Seville is highly appreciated by consumers, it is covered by the DOP Antequera , Steppe , Sierra Cadiz and Montoro-Adamuz .
