Castellana

A variety that is originally from Castilla-La Mancha, which is where it seems to have taken its name from. It is mostly grown in the provinces of Guadalajara, Cuenca and Madrid. It is the only variety accepted in the production of extra virgin olive oils under the Alcarria Designation of Origin label. The oils from this variety are fruity and very aromatic, with a characteristic spiciness. They are also notable for their notes of green grass and leaves and of banana.

Characteristics of the Castellana Olive

The Extra Virgin Olive Oil Castellana, is a stable oil of balanced bitterness and itching. On the other hand, in the mouth it stands out for its intense fruity with pleasant aromas of olive leaf and green grass. The characteristics of its cultivation area have earned it the recognition of PDO Alcarria Oil.

Pulp: insufficient size and quality for table.

Yield: Castellana olive has an average yield (18-20%) of oil, somewhat lower than Cornicabra.

Collection: Verdeja has a medium-high resistance to shedding.

Uses: Used for the olive oil production.
